Due to their exposure and age, the vineyards in the area of Martingana, on the south coast of Pantelleria, produce a limited number of bunches that are harvested in late August. Once the grapes have been selected they are left to dry in the sun for twenty to thirty days and turned by hand several times. The grapes are then pressed and the must fermented at a temperature of between 25 ° and 28 ° with the grape juice that has not been left to dry. The aging in “allier” barrels of 2nd and 3rd passage lasts between 48 and 54 months.
The colour of this wine is burnt topaz with an orange edge. Its scent is intoxicating, initially it is ethereal and then opens up to an orange blossom honey, dates, dried figs, apricot jam, spices like cinnamon and nutmeg. It is sweet to the palate, enveloping, perfectly balanced and with a very long finish, completing the olfactory in a harmonious return of sensation.
Blue cheese and very seasoned, chocolate with salt, hazelnut, or as a great conversation wine.
